
Herb Riot
Herb sauce · Chaos 4 · 200 ml
A chimichurri-leaning green sauce: parsley, cilantro, oregano, garlic, chili flake, sherry vinegar. Loud, raw, finishes everything off the grill.
Ingredients
- Flat-leaf parsley(base)40 g
- Cilantro20 g
- Dried oregano5 g
- Garlic2 cloves
- Sherry vinegar30 ml
- Extra-virgin olive oil90 ml
- Chili flake3 g
- Flaky saltto taste
Method
- Chop herbs and garlic by hand — a blender bruises the parsley and turns it grey.
- Combine herbs, garlic, oregano, and chili flake in a bowl.
- Whisk in sherry vinegar, then stream in olive oil. Salt aggressively.
- Rest 20 minutes before serving — the oregano needs to wake up.
