A chimichurri-leaning green sauce: parsley, cilantro, oregano, garlic, chili flake, sherry vinegar. Loud, raw, finishes everything off the grill.

Ingredients

  • Flat-leaf parsley(base)40 g
  • Cilantro20 g
  • Dried oregano5 g
  • Garlic2 cloves
  • Sherry vinegar30 ml
  • Extra-virgin olive oil90 ml
  • Chili flake3 g
  • Flaky saltto taste

Method

  1. Chop herbs and garlic by hand — a blender bruises the parsley and turns it grey.
  2. Combine herbs, garlic, oregano, and chili flake in a bowl.
  3. Whisk in sherry vinegar, then stream in olive oil. Salt aggressively.
  4. Rest 20 minutes before serving — the oregano needs to wake up.
