Lava Marmalade

Hot sauce · Chaos 7 · 250 ml

A gochujang-and-citrus hot sauce with burnt orange peel for bitter depth. Sweet-hot, sticky, finishes like a marmalade glaze on grilled chicken or eggs.

Ingredients

  • Gochujang(base)90 g
  • Lime juice55 ml
  • Honey42 g
  • Rice vinegar30 ml
  • Burnt orange peel(wildcard)12 g
  • Toasted sesame oil8 ml

Method

  1. Char orange peel directly on a gas flame or under the broiler until blackened on the edges. Cool, then chop fine.
  2. Whisk gochujang, lime juice, honey, and rice vinegar in a small saucepan over low heat until glossy.
  3. Off heat, stir in burnt orange peel and sesame oil. Rest 10 minutes for the bitterness to integrate.
  4. Decant into a bottle. Keeps 2 weeks refrigerated.
